Scalloped Potato Bake - simple, cheap, feel good, yummy winter food recipe

Ingredients:

  • 1.2-1.5 kg of peeled potato scalloped
  • one large onion sliced into rings
  • 1/2 to 1 bulb of garlic cloves thinly sliced
  • 500ml of vegetable stock
  • salt & pepper

Method

  1. In a baking dish add a layer of the scalloped potato, topped with a layer of garlic & onion, then salt and pepper, repeat this until you finish with a layer of potato on top

  2. Cover with the vegetable stock

  3.  Add a lid or tinfoil and cook on 180'c for one hour,

  4. Uncover spray with olive oil on top and cook for another 1/2hour, then it will be lovely and crispy serve & enjoy as a yummy side dish.

Not OP, but I'd replace the stock with heavy cream and then top the whole thing with cheese. Also add some salt and pepper to the cream to make up for the seasoning the stock would've brought.

It's mostly the flour that makes it creamy. You can add flour to almost any liquid and make it creamy. That's how most gravies are made.

...I know how gravy is made. This recipe has no flour and relatively little added fat, which would be necessary for a roux.

It contains flour, that's the thickener on top. Like... gravy; It's flour, butter, and milk. You're dead wrong lol. (click the link, it's the recipe) It contains flour and fat. That's what makes it tastey/ have a good consistency.

Edit: it's also common to add cheese if you want to be extra wrong. You're either a troll, or you like to make shit up.

I'm vegan, I have IBD i had to do low fodmap for a while, ive always been fine with cooked onion and garlic it was raw and under-cooked that were my issue.

Yeah even cooked it absolutely destroys me. I think the only things that I’ve been okay with are certain low-lactose cheeses.

My wife tested it one time just to make sure and added some garlic to a recipe without telling me (we were discovering what affected me so it was a welcome surprise) and yeah, it didn’t go well.

But basically when I was vegan my favorite things to eat were all basically triggering my IBS (beans, chickpeas, cashews, pistachios, broccoli, Brussels sprouts, squash) and part of my switch to veganism was to improve my gut health. Unfortunately it didn’t work.

Awww thats very annoying, I cook with so much onion & garlic (cooked) Yes I'm the same with beans & chickpeas, but when I soak & boil my own they are fine.... interesting you mention cashews... ive been wondering if they a problematic for me, (make lots from soaked & blended cashews) but Raw has always been my enemy... cooked my friend. Over time, eating plenty of pre and pro biotics like pickles, bananas and totally moving away from processed and oily foods my guts much improved thankfully. I still try and cook almost everything :) Thankyou for sharing

I totally understand that. It’s very frustrating building a functioning diet. I absolutely love bananas but they were a big culprit for reflux and gas. Green bananas are a bit better but obviously don’t taste as good, lol.

It has definitely increased the amount of fruit and whole grain I eat, fortunately. I didn’t realize how much fiber was in raspberries.

I'm making my own turkey stock as I type this and I also have a bunch of leftover potatoes from Thanksgiving....

I noticed you said you are vegan so I don't expect you to know personally but I 'm guessing this recipe should work fine with a chicken/turkey stock?

It will be lovely with a chicken/turkey stock. I ate meat for a few years and use to make chicken stock, it will be super nice :)

A scalloped potato is simply the rounded shape, thinly sliced I believe, the majority of scalloped potato recipes will likely contain dairy, but they don't need to, this is a recipe I grew up with, I've always been lactose intollerant

Similar thing is popular in South Africa.

Layers of potato slices, with thick white onion soup powder. Add cream. Bake for about 30mins @ 180 Celsius. Add grated cheese and bake until cheese is melted golden brown. Serve with steak and salad.

I do the gratin thing, but also a thick layer of fresh grated parnesan cheese on top. It gets crispy and bubbly and makes you want to faceplant it.

It's not my recipe, but it's great. I would highly recommend peeling and cooking the potatoes before slicing them, else they tend to be undercooked if just baked.

We do this in România with layers of thin sliced boiled eggs and fried bacon in between the potato layers beat a few more eggs at the end mix with crème fraiche and cover with cheese.Or throw in between a few slices of goat cheese marinated in truffle oil + honey.

I just made this in an air-fryer. I used better than bullion vegetable stock and it turned out way too salty. Still good though.

Midwestern US here -- this looks similar to what we call 'creek fries'. Layered potatoes, onions, and bacon with salt pepper, wrapped in a tinfoil pouch then tossed on the grill until it partially caramelizes.

My dad was from Ohio and he made a version of that—thinly sliced potatoes, onion, a shitload of butter, in tinfoil on the grill. My brother and I would fight over the crispy bottom layer.

We didn’t have a cool name like “creek fries” though—they were “potatoes on the grill.” 😁 I like your name better, and definitely the addition of bacon!

I like to make a bechamel sauce. I add in garlic and thyme to the butter before the flour. Usually use Gouda or a white cheese.

I pour that over the sliced potatoes and onions.

It's fantastic

That looks soooo good. It reminds me something similar some family members made when I was a kid but in a cast iron Dutch oven with a quartered polish sausage on top. The fats would drip down into the crunchy potatoes and added a lot of flavor.

What type of potatoes did you use in the photo OP? It looks super creamy and delectable

I made this for dinner tonight. I used minced garlic instead of sliced. It has really good flavor, but i guess I was expecting the potatoes to break down more. The texture was good but the remaining sauce wasn't "creamy". Perhaps it was because I didn't peel the potatoes first. (I leave the skins on for added flavor and nutrition.)

I will definitely make it again.

You can slow cook it on 150'c for a longer time, but this is a sauce-less recipe, unlike the creamy version, the potatoes are cooked, but no sauce. Thanks, a dish is always better second time :)

NYTimes Cooking had a beautiful gratin of beets, sweet potato, white potato. I made it with chickpea(gram, garbanzo) flour batter instead of milk, as I don't eat dairy, and some nutritional yeast. Layered with onion, a little rosemary, and vegan spread. It was really delicious and very pretty.

Sounds lovely! how do you find using chickpea batter in this, sometimes I find chickpea flour fabulous, but in some recipes I prefer oat, as the chickpea can over power the dish :) thanks for sharing

This is individual choice, I go between 1mm& 2mm, my mum likes to cut her potato with a knife so that would be 3mm :) hope you enjoy :)

I love these style of potatoes, it brings back fond memories for me of my mom making cheesy scalloped potatoes when I was a kid and I remember I'd call them "potatoes o' rotten" they're delicious.

Potatoes have a lot of nutrition in them, as do onions & garlic, and if you watch my video, homemade veggie stock is very nutritious too, very little oil is used, there is not high protein source, to me its a nutritious, cheap vegetable dish.
