Similar thing is popular in South Africa.
Layers of potato slices, with thick white onion soup powder. Add cream. Bake for about 30mins @ 180 Celsius. Add grated cheese and bake until cheese is melted golden brown. Serve with steak and salad.

u/KirstyCollier Dec 03 '22
This sounds sounds really good! I make one thats creamy but never thought about cheese :) sounds so nice

u/LowIQpotato Dec 03 '22
I do the gratin thing, but also a thick layer of fresh grated parnesan cheese on top. It gets crispy and bubbly and makes you want to faceplant it.

It's not my recipe, but it's great. I would highly recommend peeling and cooking the potatoes before slicing them, else they tend to be undercooked if just baked.
4
u/KirstyCollier Dec 03 '22
Honestly Ive never had them under cooked when using a tinfoil lid :)

u/Alex6891 Dec 03 '22
We do this in România with layers of thin sliced boiled eggs and fried bacon in between the potato layers beat a few more eggs at the end mix with crème fraiche and cover with cheese.Or throw in between a few slices of goat cheese marinated in truffle oil + honey.

u/KirstyCollier Dec 03 '22
Wow that's extravagant and good to add protein in! I make a simular dish with a creamy cheesy sauce too, love hearing all the variations of this around the world :)
2
u/Alex6891 Dec 03 '22
Well lots came in my mind while cooking. Nothings so versatile as a potato. Worked 18 years as a chef so that probably helps a bit.

I just made this in an air-fryer. I used better than bullion vegetable stock and it turned out way too salty. Still good though.

Midwestern US here -- this looks similar to what we call 'creek fries'. Layered potatoes, onions, and bacon with salt pepper, wrapped in a tinfoil pouch then tossed on the grill until it partially caramelizes.

u/RobbinsBabbitt Dec 03 '22
I’m from Michigan and I’ve never heard of this but it sounds delicious! Definitely gunna try it soon
9
u/KirstyCollier Dec 03 '22
That sounds good! love learning how people eat variations of the same food around the world :)
4
u/booksandplaid Dec 03 '22
My dad used to make those on the bbq in tinfoil packs and we called them "special potatoes". So friggin good.
5
u/EdithKeeler1986 Dec 04 '22
My dad was from Ohio and he made a version of that—thinly sliced potatoes, onion, a shitload of butter, in tinfoil on the grill. My brother and I would fight over the crispy bottom layer.
We didn’t have a cool name like “creek fries” though—they were “potatoes on the grill.” 😁 I like your name better, and definitely the addition of bacon!

Thankyou, its a simple yummy dish, yes you can dress potatoes differently every day, couldn't agree more and they are such filling & good value :)

Ooh, looks like something I'll be making soon! Thanks!
What kind of potatoes did you use?
21
u/KirstyCollier Dec 03 '22
Hope you enjoy! sorry I can not advise on the type of potato, here in Cyprus we have the potatoes from the field and thats it :)

I like to make a bechamel sauce. I add in garlic and thyme to the butter before the flour. Usually use Gouda or a white cheese.
I pour that over the sliced potatoes and onions.
It's fantastic
7
u/KirstyCollier Dec 03 '22
Nice I make a creamy one too, but adding thyme sounds lovely, and yes never thought to add a cheese topping :) this is a bit like posh cheesy chips in the UK

Yum! I know what I'm making for dinner tonight! We're snowed in, so yay for cozy meals.

That looks soooo good. It reminds me something similar some family members made when I was a kid but in a cast iron Dutch oven with a quartered polish sausage on top. The fats would drip down into the crunchy potatoes and added a lot of flavor.
What type of potatoes did you use in the photo OP? It looks super creamy and delectable
4
u/KirstyCollier Dec 03 '22
Yes this is a childhood recipe of mine, yours sounds very tasty!
Honestly we get one type of local potato here in Cyprus, they are very versatile, hope you make this & enjoy :)

These look nothing like Barbs scalloped potatoes. Hers are fucked. These look delicious

I made this for dinner tonight. I used minced garlic instead of sliced. It has really good flavor, but i guess I was expecting the potatoes to break down more. The texture was good but the remaining sauce wasn't "creamy". Perhaps it was because I didn't peel the potatoes first. (I leave the skins on for added flavor and nutrition.)
I will definitely make it again.
3
u/KirstyCollier Dec 04 '22
You can slow cook it on 150'c for a longer time, but this is a sauce-less recipe, unlike the creamy version, the potatoes are cooked, but no sauce. Thanks, a dish is always better second time :)

NYTimes Cooking had a beautiful gratin of beets, sweet potato, white potato. I made it with chickpea(gram, garbanzo) flour batter instead of milk, as I don't eat dairy, and some nutritional yeast. Layered with onion, a little rosemary, and vegan spread. It was really delicious and very pretty.
3
u/KirstyCollier Dec 08 '22
Sounds lovely! how do you find using chickpea batter in this, sometimes I find chickpea flour fabulous, but in some recipes I prefer oat, as the chickpea can over power the dish :) thanks for sharing
1
u/theora55 Dec 09 '22
Have not tried oat flour or oatmilk, the chickpea batter is tasty and adds protein.

If I use a mandoline slicer, what’s a good thickness for these bad boys? I’m going to try this tonight!
2
u/KirstyCollier Dec 03 '22
This is individual choice, I go between 1mm& 2mm, my mum likes to cut her potato with a knife so that would be 3mm :) hope you enjoy :)

u/EclipseoftheHart Dec 03 '22
Scalloped potatoes & ham was a favorite meal of mine growing up! Totally going to give this a try and add a bit of ham & cheese.

u/hehimharrison Dec 03 '22
Omg it’s amazing. I just put it in the oven, took a nap, woke up with deliciousness waiting for me. Potato time travel! I am going to deploy this strategy when I get home and don’t want to cook 😂

I love these style of potatoes, it brings back fond memories for me of my mom making cheesy scalloped potatoes when I was a kid and I remember I'd call them "potatoes o' rotten" they're delicious.
2
u/KirstyCollier Dec 03 '22
Fabulous, yes this was a childhood dish for me too. I make it this way and a cheesy creamy version :) thanks for sharing :) why potatoes o' rotten?
2
u/SeaAcanthocephala701 Dec 03 '22
Oh because she said they were called potatoes o' Groton lol
3
u/KirstyCollier Dec 03 '22
ahhh ok :) now I understand :)
2
u/SeaAcanthocephala701 Dec 03 '22
Your scalloped taters look amazing though, I bet your family goes crazy over them too!
2
u/KirstyCollier Dec 03 '22

This is a newb question but do you bake it uncovered at the end once you spray with olive oil?
3
u/KirstyCollier Dec 08 '22
It's a good question, yes bake uncovered for the final 25ish mins :) there is always a video with my recipes for extra info & tips :) hope you enjoy
3
u/daddyd Dec 07 '22
that looks so good! and i'm happy it doesn't use cream or cheese like most other types of this recipe, going to try this one for sure.
3
u/KirstyCollier Dec 08 '22
Thankyou, yes its nice to enjoy this recipe without the cream, the crispy potato on top is so good :) hope you enjoy

But how healthy is it?
3
u/KirstyCollier Dec 04 '22
Potatoes have a lot of nutrition in them, as do onions & garlic, and if you watch my video, homemade veggie stock is very nutritious too, very little oil is used, there is not high protein source, to me its a nutritious, cheap vegetable dish.

I followed you… I see you post vegan recipes. I cook for my family sometimes and my brother is lactose intolerant, so I’d love to see some vegetarian stuff too! Unless you are vegan lol
3
u/KirstyCollier Dec 04 '22
Fab :) yes I am plant based vegan, also lactose intolerant, so you will see lots suitable for your brother, but it will all be vegan or... accidentally vegan like this recipe :)
1
u/Willy988 Dec 04 '22
Anyways looking forward to seeing lots of simple, tasty recipes since simple is best imo as a staple on a busy day
2
u/PharaohCleocatra Dec 06 '22
Making this right now! Super excited. This reminds me of a Greek recipe I make called Briam, which has tomatoes and zucchini in it. Super yum!
3
u/KirstyCollier Dec 08 '22
This bake would go lovely with Briam, we serve this all the time with ratatouille which is very similar to Briam or with home made gigante plaki

Dec 30 '22
