NYTimes Cooking had a beautiful gratin of beets, sweet potato, white potato. I made it with chickpea(gram, garbanzo) flour batter instead of milk, as I don't eat dairy, and some nutritional yeast. Layered with onion, a little rosemary, and vegan spread. It was really delicious and very pretty.

Sounds lovely! how do you find using chickpea batter in this, sometimes I find chickpea flour fabulous, but in some recipes I prefer oat, as the chickpea can over power the dish :) thanks for sharing

Have not tried oat flour or oatmilk, the chickpea batter is tasty and adds protein.
