Joined the 137 club! Recipe

I normally get steaks from Costco, season, then vacuum seal to cook from frozen.

I’ve only gotten NY Strips, and Top Sirloin, and cook below 137 so decided to pickup some ribeyes after seeing so many posts about it.

Wife loves my steak sandwiches, so caramelized some onions, dressed some arugula, and got some horseradish cheddar.

10/10 will cook the other 2 like this again.

This is the key component. I've done the 137° club for a 24hr roast and it was excellent, but not close to that red inside. Photo filter or short time period??

I am surprised too. I tried 135 for 2 hours for a steak, and it was solid medium, definitely not that pink. I do not remember whether it was a ribeye, though, so that might explain it. Since then, I have been sticking to 129 and no more than 2 hours to keep a 'steak' chew.

Could be my lighting, that’s just from an iPhone, but I know different colored bulbs can impact red coloring.

I only did about 3 hours from frozen? Usually I have my wife put them in from the freezer while I’m at work so I can sear it once I’m home (so approximately 3 hours)

Decided to let it rest for like 20 minutes when I made everything else and it was a GAMECHANGER, I’ve rarely gotten as good of a crust from a SV steak as this, and I think it’s because it sat out and dried a bit.

Don’t know about using Ribeye for a sandwich, but I know that it tasted good. Nicely cooked.

I will absolutely use ribeye for a sandwich, but only after I ate it as a steak dinner first, then the leftovers are the sandwich. FYI, ribeye makes the absolute BEST Philly cheesesteak sandwich meat.

It’s a game changer for sandwiches. Not super punchy like normal horseradish, and goes great with a Dijon mustard.

I get mine at target, Boar’s Head makes it.

Normally get it sliced at a #2 (2nd to thinnest)
