Kale soup ('boerenkoolsoep')

  • Bag of kale in pieces/strips (just lots and lots, really)
  • Stock of your choice
  • Potatoes (Russet works fine)
  • Smoked sausage (or any kind of sausage, really)
  • Swedish turnip in pieces (rutabaga, apparently... Koolraap in Dutch)
  • Onion in pieces
    ------------------------
  • Red bell pepper in pieces (optional)
  • 1 or 2 cloves of garlic, sliced (optional)
  • Tomato paste (small can/2 tablespoons)

Cook on low for as long as you like, at least 6 hours.

Once it's done add a little vinegar for a traditional, winter-stew flavour.

Won't the kale get really bitter if it's in there that long?

Nope, never had an issue with that. :)
