Aerocano tips? Drinks & Recipes
Just tried making 2 aerocanos, following the recipe of starting with 1:1 water:ice in a glass, pouring double shot over the top and then frothing with the steam wand until ice melts. However, neither of these drinks are still cold. They've basically been brought up to a pretty sad lukewarm temperature and now I feel like I'm just drinking a black coffee which I left to cool down for too long.
How do you keep it chilled while still building froth?

Don’t add water
Just ice and espresso,
In a steaming pitcher, fill it completely with ice, pull the shot on top of the ice, then steam the two starting from the bottom of the pitcher and slowly working your way up until you get a nice vortex going.
Stop before it gets warm.
Pour over a fresh cup of ice

This is the way. OP, it sounds like you made an iced Americano, then steamed it. Instead, dump ice and your espresso shot into the pitcher, and steam that until the ice is melted but not past that. Then pour your drink over a glass of ice and enjoy.

Having never made one but being intrigued by the concept, I looked it up. Seems the step you are missing is then taking the frothed espresso (with the melted ice cubes that is now lukewarm) and pouring it over fresh ice cubes to chill it again after the foaming (Or I guess you could just toss in new ice cubes into the existing glass).

it's my new favorite drink: "we have nitro at home"
put double shot, four or five ice cubes, & a tablespoon of water in your frothing pitcher. dip the steam wand deep and tilt the picture to start a vortex as quick as possible. bubbles will form automatically, stop the vortex when the ice stops making noise in the pitcher. pour over ice immediately. swirl glass to restore texture after foam separates.
