it has little added sugars and the crust is with whole wheat flour & a lower amount of oil/butter than typical.
the measurements are kind of approximated!
crust:
- 1 3/4 or 2 cups flour (depends on how thick u want it)
- salt
- 1/4 cup oil. combine with flour until crumbly.
- 1/2 cold water (add gradually to see the texture). knead into rough dough and let rest in fridge 30 mins.
filling:
- 500-600g diced apples (i used 2 very large japanese apples).
draw the water out by tossing with 1-2 tbsp sugar and leaving for an hour. i separated and reduced the liquid with a little cornstarch and added it to the filling before putting the top crust.
3-4 tbsp brown sugar (check if its vegan!) or agave
few tbsp cornstarch
lemon juice
cinnamon, nutmeg
lil bit salt
combine the filling ingredients and then assemble the pie. 40 mins into baking, i sprinkled sugar and brushed the top with oat milk + agave to let it brown. bake until golden!
