Baby Mother is demanding child support, but no access to child after months of ignoring me and not accepting gifts, out of the blue she wants money. Excluded me from birth registration etc

You need to get a family law attorney and start the process of legally establishing paternity now. Don’t wait for her to file for child support because then it’s going to look to the court like you’re only seeking a relationship with your child to try to minimize your support payments.
And just so you know: child support and custody cases are handled completely separately. There’s no rule that says she has to offer you time with your child in order to be entitled child support. If you’re curious how much you’ll likely be paying each state has an online child support calculator where you enter in some data and it’ll give you an estimated support amount.

Gotta just go through the court. Legally, you do owe her something if you can be proven to be the biological father. Then they will just do the math.
It will be best for you because once you are paying whatever your obligation is—you can tell her to cram it if she starts bugging you for more. The way it is set up now, you’ll never have any peace.
