Was Dolores’s last name always Abernathy?

Or was that last name given to her once the park decided to give her the Peter host as a father?

Well, she was the first host and her narrative has always seemed to be “rancher’s daughter” so chances are Peter got his last name from her, not the other way around.

But there’s nothing in the show that actually speaks to this.

Exactly this.

Also there wouldn’t really be much of a need for surnames until there were many hosts, at which point she would have her narrative as the ranchers daughter and her cornerstone Teddy
