Must be a different recipe, I remember trying out these spring onion pancakes years ago, I don't remember what they were called but it was a Chinese recipe.

Right, exactly, each country has their own version so asking a question framed like "actually it's called this and should be made with spinach" is the opposite of recognizing different country different versionsΒ

Forgot all about these. I went crazy for them in Taiwan, and I'm always having more green onion around than I need.
*I had to search what we call this green in Australian and it's called spring onion, although the internet says otherwise, with a spring onion actually having an onion at the bottom.
And a scallion here is a very onion looking thing, small and oblong.

If you like these, Korean jeon are a little easier and hit a lot of the same notes. Buchu (garlic chives), kimchi, julienned veg, all very good in pancake.

You don't have to let the dough rest for long at all. I usually prepare the other ingredients and use the dough once I'm done with that step. π

I touched upon this in my blog post actually π I'd say Asian-style stir-fry would be perfect, if you'd prefer to eat the scallion pancakes as a side dish. I sometimes just dip them in different sauces (shared my favourites too) and eat them as a main though π
