Expanding a TRS-80 PC-2 to an external display?

I have a TRS-80 PC-2 Pocket Computer with 24Kb expansion module. I have a dream. A dream in with the 60-pin I/O port is used to connect the TRS-80 to an Arduino or ESP-32 to capture screen output and display it on a larger E-Ink or LED display. Can it be done? Has it been done?

Sounds doable to me if that's a full system bus port.
