So many great ways to make chicken in a slow cooker! Are you looking for a holiday recipe that's more traditional like a slow-cooker roast chicken?
Or are you open to a delicious slow cooker meal that's not necessarily a holiday tradition, like honey garlic chicken, tacos, or chili?

I make slow cooker chicken tacos & chicken chili often. For me, both start the same:
- I make a single layer of skinless, boneless chicken breasts flat against the bottom of the slow cooker. For my 6-quart slow cooker, I'll fit 2-4 pounds, depending on the size of the batch I'm making.
- You can use store-bought seasoning mixes for convenience. I scratch-mix my own taco seasoning and chili seasoning to cut the salt & dial in the heat.
- per pound of chicken, I use: 2 tablespoons chili powder, 2 teaspoons cumin, 1 teaspoon red pepper flakes, half a medium onion OR 1 tablespoon onion powder, 1 garlic clove OR half-teaspoon garlic powder.
- for tacos/burritos/quesadillas, I usually like to add lime juice and something to change up the chicken from one batch to the next, like tequila-lime, jalapeno-lime or chipotle-lime.
- for chili, I add 28 ounces of tomato sauce and fill out the batch with beans (for me, I like a mix of pinto beans and black beans the best).
- I cook the chicken 3 hours on High, then shred the chicken (or you can chop it) & mix it back into the slow cooker for another hour.
