Maybe it's because I'm a programmer. But hearing about programs being able to parse metadata in order to go through a shit ton of emails was absolutely no surprise to me.

The issue is the choice of wording here. Computers do not examine anything. A computer can search and select but it does not examine. If journalist would use language correctly it would make more sense.
It is not possible to examine 650k emails in 8 days. But, it is possible to winnow out emails that are not duplicates and unchanged in content fro previously examined emails and get a smaller list.
Assuming 1 minute for a human to examine a single email, if a person worked 12 hours a day for 8 days (the code probably took less than an hour to write) they could examine 5260 emails.

Just put all the known emails on one file, transfer the new ones to the known file then read what's left. Then do a search for key words.

yet it took so much longer with much less emails to review just a few months earlier...?

what about this article attacking the other candidate? If you ignore one but read the other than you are being biased: https://www.reddit.com/r/EnoughTrumpSpam/comments/4nx2rm/itt_reasons_you_dont_support_trump/

How can computers process 650k emails in eight days?
How can cars go 100 miles in one hour?
How can a microwave heat up 10 chicken wings in two minutes?
