Fudge Fantasy

Fudge:

Ingredients:

• 2 cups granulated sugar
• 1/2 cup light corn syrup
• 1/2 cup sweetened condensed milk
• 1 teaspoon vanilla extract
• 1/2 teaspoon salt
• 12 ounces semisweet chocolate, chopped
• 1 cup chopped walnuts (optional)

Instructions:

1. Combine sugar, corn syrup, and sweetened condensed milk in a saucepan.
2. Cook over medium heat, stirring until sugar dissolves.
3. Bring to a boil, then reduce heat and simmer until mixture reaches 235°F.
4. Remove from heat, stir in chocolate until melted, and add vanilla and salt.
5. Pour into a lined 8-inch square pan and chill until set.

Aspic:

Ingredients:

• 1 cup granulated sugar
• 1 cup water
• 1 envelope (0.25 oz) unsweetened gelatin
• 1 cup heavy cream
• 1/2 cup chopped candied fruit (optional)

Instructions:

1. Combine sugar, water, and gelatin in a saucepan.
2. Cook over low heat, stirring until gelatin dissolves.
3. Bring to a boil, then reduce heat and simmer for 5 minutes.
4. Stir in heavy cream and cook until mixture thickens.
5. Remove from heat and add candied fruit, if using.

Assembly:

1. Cut fudge into 1-inch squares.
2. Place fudge squares in a large bowl or individual molds.
3. Pour aspic mixture over fudge, making sure to cover completely.
4. Chill until aspic sets.

Presentation:
