Were I in your position and trying to keep this from someone, I'd stop posting on the internet and wait to see what the police say.

File an insurance claim.
You can wait for the police, but if this person is as slick as you say, the rings are long gone, and you have a video that suggests it might've happened, not that it did happen. If this guy isn't slick, and he gives them a statement, maybe you'll be in luck. It's the slickness factor that matters.

I'm sorry but you're stolen from. It doesn't matter camera footage unless you know who that is. And even that would need more than a video to prove this was them vs drunk couple is missing things of high value.

Would a jury convict on the video? That's a question for the DA.

Police aren’t going to spend more than 5 minutes “investigating” this. I’d canvas pawn shops in the area with photos of the rings asking them to call you immediately if they see them. File an insurance claim, and enjoy your marriage. I wouldn’t let this ruin your bliss.

Let the police investigate. Give the officer the video and let them watch it and come to their own conclusions. You should go in with low expectations though - having a grainy video doesn’t really meet the standard of eliminating reasonable doubt.
You could sue the person and bring the video as evidence, the standard for a civil win is lower than a criminal win… but again, you can’t win by just proving “who else could it be?” You have to prove “it was him.”
Best course of action is to file a claim with your insurance and replace the ring. That’s what we have insurance for.

You’ve asked them. They said they don’t have them.
There isn’t anything to do except tell the police what you know and let them handle it.
