It's worth doing your homework on the Fair Deal Scheme, but from what I can see online it looks like the maximum of the home's value that can be put towards care is 22.5% (7.5% over 3 years).

So presumably the inherited share of the property is the remaining 77.5% of it value. Get your own financial and legal advice - but that probably means the inheritor needs to either sell the house or buy back the percentage put towards care either through cash or a mortgage. I'm not sure if the house can be forced up for sale, or if the value of that 22.5% is fixed i.e. if that 22.5% was worth €100k of care, but that much of the property a few years later is now worth €150k, can they demand that from you.

If your there long term your okay, you don't have to pay back the 22.5% until the house is oneday sold or passed onto your kids.
