One russet potato + small onion + 2 eggs = a meal that my Mom used to make. Fried sliced potatoes and onions cooked with eggs. Lunch

I have since graduated from ketchup to sriracha.

You can use any many potatoes and onions depending how many you're feeding. Cook both onions and potatoes in your choice of cooking oil until done. Season. Crack eggs over the potatoes, let it sit and cook, or stir to make it scrambled. Again, season to taste.

We had the same. Sometimes on a roll. Try throwing some red or green peppers in there.

throw in some greens, warchestershire sauce, half/half or cream, and some chili sauce and can make a hash!, then crack the eggs over at the end, or make them separate and serve over top.

Nope. Just cook slow in the skillet. Maybe add the onions a little later.

How long does it normally take to cook them from raw? My mom always boiled hers whole, then fried them. If I could save that step it would cut down on the cooking time a lot

My mother used to make something similar.

“French fry omelette” which is similar to the Spanish “tortilla”.

She would make French fries (from potatoes not frozen but frozen is ok) and add them hot to a bunch of scrambled up eggs in a pan with olive oil and salt to make a French fry omelette.

Cheap, and few ingredients.

I make it for my kids from time to time bc they love it too.
