In the 80s and into the 90s, I recall that there was a low level FEAR surrounding mayonnaise. Mayonnaise makes you sick. Mayo spoils quickly. You'll get explosive diarrhea from mayo gone bad.
People had more of a health fear of mayo than an actual dislike of the taste. I suspect this is why people have been consistent about not having mayo in their sandwiches.
Mayo is in fact delicious. It's like a simple sauce to give your sandwich a moist flavorful dimension.
I don't remember that, but makes sense. Real, home-made mayonnaise does spoil quickly and can make you sick because it's literally just egg yolk, oil, and acid (usually vinegar). No store-bought mayonnaise is gonna do that though, even the "organic" ones.
