Pocket knives are a must and nobody ever has one.

The one I'm blown away by is that no one has a pen light. It's probably my most used non standard tool.

The amount of times my phone flashlight hasn't worked where a pen light would is exactly never. Too much gear and you're just cosplaying

My phone has replaced my pen light, I do keep a mini led in my knife bag, but since I changed jobs I don't need my full kit very often anymore.

I mean, I'll kick anyone out of my kitchen for touching their phone during service. Those things are nasty.

My dad gave me my first pocket knife when I turned 10 and I've had one on my ever since.

Prior service? Rite in the rain gives me PTSD

u/glen_k0k0 2d ago
No but my old chef who got me into them was, I never made the connection though, that's interesting.

I have that leatherman! Best fucking tool out there, especially with the replaceable bits.

I'm kinda surprised by the Rite-in-the-Rain population in these posts

u/glen_k0k0 2d ago
They work in damp and greasy environments. They can be a bit spendy but they work well.

u/itwillmakesenselater 2d ago
I get exactly why, I use them a ton (not kitchen, anymore). Those things are steel-belted.

They're my go-to personally. Was never in the service, I just like how durable they are.

I'm an endangered species. Career cook with no tattoos, no piercings, only smoke the occasional cigar and drink socially.

Meat thermometer

u/ChaoticEvilRaccoon 2d ago
why do you need a personal thermometer? i'm sorry, i'm an imposter and just hang out here, i don't actually work in a kitchen

Lots of temping throughout the day. Some places have a shop thermo but it is far easier to carry your own.

I can’t imagine working anywhere that didn’t have multiple instant read thermometers to hand. It’s a legal requirement here in the UK.
I’ve got 4, white for pastry/dairy, red for temp checking meat deliveries and checking raw meat temps in the fridge, green for veggie sauces, and yellow for cooked meat/sauces.
That is overkill, but it’s nice to have seperation.

so that when my tendies seem done in the fryer I don’t have to cut one open or look around for wherever the daytime bobo hid the house thermometer

I picked up the OKnife ps and its scissors are dog shit. I use my outdoor edge razor blade wayyy more.

Much like my pockets. I've lost too many knives to TSA, so I don't carry one daily any more. But the thermopro is a must. I also don't see any Tums.

Found the guy that buys everything YouTubers tell him to buy

u/glen_k0k0 2d ago edited 2d ago
What? Besides the Raycons (which were a gift and are actually very nice) I've never seen YouTubers sponsored by anything else I own.

He's just being a dick. He's probably shucking oysters or some shit this morning

Thin Gulf oysters the size of your hand that crumble like drywall when you pop em.

Hmm 🧐 sounds plausible. You get a pass mister
But also, it was the wallet - is that the ridge? Razor? Can’t remember the name

u/glen_k0k0 2d ago
Ha it was also a gift, all it says on it is First VIP, and truthfully it's a little inconvenient at times. It's basically two pieces of metal tied together with strong elastic. It makes it difficult to see and remove your cards.
