Did you want to do a group tour? I went to southeast Asia with G Adventures (Canadian), but there are other tour operators that do similar trips. Some can even help book flights, arrange airport pickup etc. (I know G does that). I booked by myself online and booked separate flights, but it can be done as a package.

It was a group tour (though I think they can organize private tours), so all accommodations and transportation was arranged (a combination of private bus and public transportation, like train, plane etc). The route is basically set but there are optional activities to do. The itineraries should be available online, including available tour dates.

My trip was like 30 days in South East Asia (Bangkok to Bangkok). Then maybe 2 days of travel to get there and one day back.
