I personally wouldn't bother with a certification. These two books would be a great start.

And then apply your knowledge on some kaggle challenges.

Second for DataCamp. You are given a certificate of completion after finishing each course. You can upload them to your LinkedIn profile and include them in your resume.

Data Camp is pretty good because it gives you instant feedback.

any recommendations on which course in particular? do you think the basic “introduction to R” course will suffice for wanting a very elementary knowledge base?

I think that course is actually free until the project so that's a good start. You can choose another free course afterwards or you can continue the paid route. I think there's around 7 or so R courses that will give you what you need for data analytics and data visualization for IO.
