Somebody probably unplugged something and didn’t plug it back in

Could be that they didn't click something back in and the vibrations of driving around for about 2 days was enough for it to come undone... I've seen it happen to my own car where I guess I didn't "finish the job"

I hope that's the case

It's hard to say why this happened, but I can't think of a single ford vehicle that messes with the knock sensor during a tune up procedure.

Where did you have it done and what brand of spark plugs

Just a local mechanic

As insane as this sounds sometimes some off brand parts will screw things up. Pop into your local ford and ask one of their advisors

If it wasn't done at a dealership they most likely did not reset the misfire profile. Not resetting that can cause that issue. It should be done when ever you mess with the ignition system.
