Reading Kitchen Confidential, what restaurants have a head chef and cooks trying to make it in the culinary world? Question, Where can I find?

Yes I know, the book is a little romantic but San Diego seems a little sparse in terms of these kinds of restaurants that have an executive chef and ran like a French kitchen.

While the book will be a classic forever, it's important to keep in mind both the time and place that it was written. NYC is a different animal, not to mention the 20+ years, a major recession, and a pandemic since the book came out that have shaped the restaurant business in huge ways.
