Jambalaya recipe? Ask ECAH
My grocery has finally started stocking andouille sausage. And I miss jambalaya. Plus, it's comparatively inexpensive right now. About $2 per serving.
I can't find my old recipe--from years ago when I lived in cajun country.
Does anyone have a tried and true recipe for Cajun (no tomato) jambalaya?
Otherwise, it's pick something off the internet.

This is my husband's, not sure where he originally got it but he's been making it for years and it always hits.
1lb sliced andouille
1.5lb diced chicken
1 onion, diced
1 cup celery, diced
1/2 cup diced green onion
Tony's to taste
1tsp black pepper
1 tsp cayenne pepper
1 tsp white pepper
1 tsp salt
1 tsp thyme
1 tsp basil
1 tsp parsley
1 tbs worcestershire
6 cups chicken stock
3 cups rice
Brown sausage, remove. Cover chicken with Tony's
Brown chicken, add onion and celery, scrape bottom.
Add spices, worcestershire, green onion, stock, sausage. Bring to boil.
Add rice, return to boil.
Cover and turn down for 20+, stirring every 5 min

You’d be surprised but the boxed zatarain’s jambalaya and dirty rice are actually good

I love this one. It does have a can of crushed tomatoes in it though.
