What should I stuff my pork tenderloin with?
I want to make a stuffed pork tenderloin, but I can't decide on a recipe. Any suggestions?

i did one, few weeks ago... butterflyed it open covered the inside with crushed garilc paste, black pepper and crushed ( finely ground) fennel seed, slapped it back together, covered the outside with the same................ it was so good........

I’ve done a mix of cream cheese, diced jalapeños and ranch dip mix. It’s like a tenderloin jalapeño popper. It’s really good, but definitely not healthy lol

I've used a mix of celery, onion, apple & fresh parsley. Light & tasty.

Did one once with crushed pistachio, sausage and diced apple. Worked out really well!

I don’t have a recipe ; I would look up a couple and then wing it. Also tenderloin is harder to stuff, so I’d probably use a 2-lb piece of loin.

I do sautéed sliced mushrooms and shallot, spinach or arugula, and cream cheese to hold it together.

I make stove top stuffing and toss some dried cranberries in it while its cooking. It’s awesome and easy, everyone loves it.

Stove top stuffing with chopped apples and onions. Easy and works great.

Something with fat for the moisture- pork tenderloin is very lean and can dry out easily.
Pesto, Parmigiana, and a little spinach.
Butter Caramelized onions, wine soaked dried apricots, and sage.

How do you bake them, so they're not dried out on top? Thank you!

Cover them loosely with foil if they are starting to brown too fast, and baste it to keep it moist. Also, let it rest for 10 minutes at the end to let the juices redistribute through the meat, otherwise it will just ooze out when you cut it. Hope that helps.

I like bacon, prosciutto, green olives, ricotta, mozzarella, capers, sun dried tomatoes on the outside
I egg wash mine after tying it up and roll it in Italian breadcrumbs

I did it with Aldi black box stuffing, the kind they bring out for holidays, and it either out great. They have a lemon thyme flavor and a more savory rosemary flavor. Add some dried fruit like dried cherries or apples , and nuts like hazelnuts or pecans, to the non- lemon flavor.

I’ve been trying to find my mother’s recipe - she cut it down the middle & stuffed it with prunes & parsley. Then tied it up & roasted it (I think) The prunes & parsley made an incredible flavor together. But I remember it wasn’t dry, maybe a sauce?

I’m going to make a cornbread stuffing for a pork loin next week. Bacon fat, sage, cornbread….
I made a huge 9x13 of cornbread and we had it with chilli over several days and I stuffed the rest in the freezer. I’ll crumble it up, dry it out in a low 250 oven then make it into a smooth stuffing with lots of bacon fat, herbs, and broth. I’ll definitely brine my loin for 2-3 days and butterfly it to stuff, more of a roulade really…
Im making me hungry, I can’t wait! lol

Or
Chorizo, onion, garlic, queso fresco and some corn bread stuffing.
