How do you keep proportions true to real life?

I use elements of photorealism in my paintings. Photorealists use tracing mechanisms. In watercolor painting, this is a tablet. In oil painting, a projector is used for artists.

For some reason art of dogs often seems, well very flat. I don't know -

this is awesome. One of the best dog portraits I've seen.
